Couscous salad with cucumbers, avocado, lettuce and seeds

Vegan dish

Makes 4 servings

Ingredients

  • 300g of cuscus
  • 400 ml of homemade vegetable broth or boiling water
  • 2 tomatoes
  • 2 cucumbers
  • 3 avocados
  • Lettuce leaves
  • A handful of pumpkin seeds
  • Half lemon juice
  • 1 teaspoon cumin and fennel
  • parsley
  • 3 tablespoons of cold first-strength oil

Elaboration

Place the couscous in soaking with the boiling broth, or boiling water for 15 to 20 minutes.

In a bowl add the cucumbers, tomatoes and cut olives.

With the avocados, make a guacamole paste, and add the lemon juice and a spoonful of the sliced ​​tomatoes.

In another bowl mix the remaining tomatoes, the cucumber and the olives.

Add the couscous and spices, along with the oil and a little salt. Stir

The plate is served with a portion of salad, plus the pasta of avocados and a little couscous.
