Pancakes gluten free
- 250 g of rice flour
- 1 egg white beaten or 1 tablespoon of chia or flax. Leave to soak and form a gelatin that will serve as an egg.
- 3 tablespoons cornstarch
- a pinch of salt
- 1 tablespoon of cold pressed first oil
Mix the rice flour with an egg white, or the gelatin formed with the chia or linen soaking. Add cornstarch, salt, and oil. Add necessary water to prepare a liquid paste. It is left at rest for some minutes and then cooked in a pan or oiled griddle or with a little ghee or oil. It can be served with jam, sweet or fruit of your choice.
