These cheeses are excellent to accompany meals, they are easy to make and delicious. They can be made of almonds, girsasol seeds, walnuts, cashews, hazelnuts. All these cheeses, whatever the combination, have the same procedure: they are left to soak overnight (leave the amount you want to prepare). The next morning, the nuts are strained and washed. Place in the blender, place a spoonful of cold pressed first oil (it can be sunflower, olive, coconut, the desired oil, but first cold pressed), 1 tablespoon of brewer's yeast and 1 little bit of water The mixture should be well processed and firm, with the consistency similar to a mayonnaise. You can also add seasonings such as pepper, turmeric, cardamom and coriander, according to taste. The cheeses should be kept in the refrigerator, and generally for a period not longer than 7 days.
